Banana Mini Muffins/Bread

You’ll need ripe bananas, flour, sugar, eggs, butter, baking powder, and a pinch of salt.

Banana Mash: Mash the ripe bananas in a bowl and set aside.

Mixing Dry Ingredients: In another bowl, combine the flour, baking powder, and salt.

Wet Ingredients: Cream together the butter and sugar. Add eggs one at a time, then stir in the mashed bananas.

Baking: For mini muffins, bake at 350°F (175°C) for about 12-15 minutes. For banana bread, bake at 325°F (163°C) for 55-60 minutes.
